How can I time an item for 2 stages, such as to brown a turkey for an hour at 375 degrees and roast the remainder of the time at 325?
This discussion assumes you are familiar with the basic operations of entering text and using the setting controls, as discussed in the on-line Help.
Create two separate timings, one of which will set the Start time for the 375 degree browning phase and the other will set the Start time, one hour later, for the 325 degree completion phase. Here's how, in the required order:

Begin by clearing all items using menu Tools/Clear Settings for ALL Items. Reply "Yes" to the prompts.
Select the "#1" tab and enter "Turkey 375" in the text box. Tap the Enter key on the PDA's soft keyboard to complete the text entry. Next use the menu Tools/Calculator to compute the required total time. Tap the "Set" button on the calculator and the computed Duration will be transferred to the current selection, "Turkey 375".
Next, select the "Done By" time button, and a default "Start By" time will be computed based on this Duration. You now have a Start time for the "browning" phase. Tap the "OK" button,
The timer will "wait" until the Start time arrives.
Select tab "#2" and enter text "Turkey 325". Select menu Tools/Calculator. The last Duration computed should appear. Tap the "Set" button to assign this duration to "Turkey 325".
Next, select the "Done By" time button and the same "Start By"/"Done By" times assigned to "Turkey 375" should appear for "Turkey 325".
Tap the HR - (minus) button. This subtracts an hour from this item's timing, because we will have browned it for an hour first. Notice the "Start By" time is recomputed and is an hour later.
Tap the "OK" button and the waiting phase for this item will begin.
"Turkey 375" is set to start at 12:30 and "Turkey 325" is set to start at 1:30. Do NOT tap the "Start" button as this function is used to override the "Waiting" phase and start the item before the normal "Start By" time.
When the "Start" alarm goes off for "Turkey 375", don't forget to put the bird in the oven! Since this timer is no longer needed, it can be cleared and used for something else. Tap the "Pause/Set" button, then select menu Tools/Clear Item Settings. Reply "Yes" to both prompts -- confirming the clear action and clearing the text.
Make sure you select the menu "Clear Item Settings", which clears only the currently selected item, not All items!
When the "Start" alarm goes off for "Turkey 325", adjust the oven temperature and tap the "Start" button to start this phase of the timing, which is 2 hours and 30 minutes.
The timing for "Turkey 325" will commence after you tap the Start button. The Duration will count down second by second.
While counting down, you can add more time if needed: Tap the "Pause/Set" button and add more minutes with the MIN + button. Tap "OK" to resume.
When the countdown reaches 00:00:00 a "Done" alarm will sound. Tap the "Stop" button to acknowledge the alarm.
Don't forget to take the bird out of the oven!
